Pascal Balland Sancerre

SOIL: Chalky-clay.

GRAPE VARIETY: Sauvignon.

Pascal Balland leads his vineyard in a sustainable farming way, in the purest respect for the traditions and environment. Treatments are reduced, vineyards are put under grass and the efficiencies are mastered. The fermentation is made in temperature controlled tanks after pneumatic pressing. The wine is aged on fine lees. It is then taken away and stored. Before the bottling in spring the wine is filtered on tangential filter.

TASTING:

Pale golden in color with aromas on the nose of white peaches, kiwi and honey, this wine offers rich flavors of citrus on the palate combined with a delicate minerality. It has also a long and balanced finish in the mouth.

This refreshing wine will perfectly fit the following dishes:

▪ As an aperitif

▪ with fish, chicken, grilled or sautéed veal and vegetables

▪ paired with mild goat or cow’s milk cheeses, from chevre to camembert
